🫓 How to Make Kodo Millet Roti

Simple Homemade Method

1. Prepare the Flour
Take 1 cup Buddha Ratana Kodo Millet Flour in a mixing bowl. Add salt according to taste if desired.

2. Add Warm Water
Gradually add warm water while mixing until the flour begins to come together.

3. Prepare the Dough
Knead gently into a soft, smooth and workable dough. Add water gradually as needed—the exact quantity may vary depending on the flour and desired consistency.

4. Shape the Roti
Divide the dough into small portions. Gently flatten each portion using your palms or shape it between sheets of parchment/butter paper.

Since Kodo Millet flour is naturally gluten-free, the dough can be more delicate than wheat dough. Handle it gently.

5. Cook on a Tawa
Place the roti carefully on a preheated tawa over medium heat. Cook until the underside develops light brown spots.

Flip gently and cook the other side until completely cooked. Add a little ghee if desired.

6. Serve Hot
Serve immediately with ghee, dal, vegetables, curd, chutney or your favourite accompaniment.

👨🍳 Cooking Tip

For easier handling and softer rotis, use warm water and prepare a soft dough. If preferred, Kodo Millet Flour can be blended with another suitable flour for recipes where additional structure is required.

🥣 How to Make Kodo Millet Porridge

1. Make a Slurry
Mix 2–3 tablespoons of Kodo Millet Flour with a little cool water to form a smooth, lump-free paste.

2. Add Liquid
Add the mixture to a saucepan with water or milk.

3. Cook Thoroughly
Cook over medium-low heat, stirring continuously, until the flour is fully cooked and the porridge reaches your preferred consistency.

4. Serve
For a sweet preparation, add jaggery, milk, nuts or dry fruits. For a savoury version, add salt, spices or vegetables according to preference.

Kalanamak is a heritage, short-grain variety grown specifically in the Himalayan Terai. Unlike Basmati, it has a distinct dark tip, a nuttier flavour, and a softer texture. It is naturally aged and minimally processed to preserve its unique nutritional profile.
Yes, Kalanamak is known for having a lower Glycemic Index (GI) compared to many standard white rice varieties. This means it digests slower, helping to prevent sudden spikes in blood sugar levels.
A Geographical Indication (GI) tag ensures that the rice is authentically sourced from its native region (Siddharthnagar and surrounding districts in UP). It guarantees you are getting the genuine heritage grain, not a hybrid grown elsewhere.
Rinse the rice thoroughly and soak it for 20-30 minutes before cooking. Use a water-to-rice ratio of about 2:1. Cook on a low simmer until the water is absorbed, then let it rest covered for 5 minutes for the perfect fluffy texture.
Store the rice in an airtight container in a cool, dry, and dark place. Kept away from moisture and direct sunlight, our Kalanamak rice easily maintains its aroma and quality for up to 12 months.
