🍲 How to Cook Buddha Ratana Desi Masoor Dal

Ingredients:

  • 1 cup Buddha Ratana Desi Masoor Dal

  • 2½–3 cups water

  • ¼ tsp turmeric

  • Salt, to taste

  • 1–2 tsp ghee or oil

For Tadka:

  • 1 tsp cumin seeds

  • 2–3 cloves garlic, chopped

  • 1 small onion, optional

  • 1 small tomato, chopped

  • Green chilli, optional

  • Dried red chilli, optional

Method:

  1. Wash the Dal
Rinse 1 cup of Masoor Dal thoroughly 2–3 times until the water becomes relatively clear.

  2. Soaking – Optional
Masoor Dal cooks relatively quickly, so soaking is not essential. If desired, soak for 15–20 minutes, then drain.

  3. Pressure Cook
Add the washed dal, 2½–3 cups water, turmeric, and salt to a pressure cooker.

  4. Cook Until Tender
Pressure cook on medium heat for approximately 2–3 whistles. Turn off the heat and allow the pressure to release naturally.

  5. Whisk Until Creamy
Open the cooker and gently whisk the dal until smooth. Add a little hot water if you prefer a thinner consistency.

  6. Prepare the Tadka
Heat ghee or oil in a small pan. Add cumin, garlic, onion, tomato, green chilli, and dried red chilli as desired. Sauté until fragrant.

  7. Finish the Dal
Pour the hot tadka over the cooked dal and mix gently.

  8. Serve Hot
Garnish with fresh coriander and serve with steamed rice, jeera rice, roti, or chapati.

💡 Cooking Tip

Masoor Dal does not require prolonged soaking and cooks relatively quickly. For a smooth, creamy consistency, whisk the dal well after cooking. For a thinner dal, gradually add hot water until you reach your preferred consistency.

Kalanamak is a heritage, short-grain variety grown specifically in the Himalayan Terai. Unlike Basmati, it has a distinct dark tip, a nuttier flavour, and a softer texture. It is naturally aged and minimally processed to preserve its unique nutritional profile.
Yes, Kalanamak is known for having a lower Glycemic Index (GI) compared to many standard white rice varieties. This means it digests slower, helping to prevent sudden spikes in blood sugar levels.
A Geographical Indication (GI) tag ensures that the rice is authentically sourced from its native region (Siddharthnagar and surrounding districts in UP). It guarantees you are getting the genuine heritage grain, not a hybrid grown elsewhere.
Rinse the rice thoroughly and soak it for 20-30 minutes before cooking. Use a water-to-rice ratio of about 2:1. Cook on a low simmer until the water is absorbed, then let it rest covered for 5 minutes for the perfect fluffy texture.
Store the rice in an airtight container in a cool, dry, and dark place. Kept away from moisture and direct sunlight, our Kalanamak rice easily maintains its aroma and quality for up to 12 months.
