Simple Traditional Method
1. Prepare the Dough
Take 1 cup Buddha Ratana Pearl Millet Flour in a bowl. Gradually add warm water and mix with a spoon until the flour comes together.
2. Knead While Warm
Once the mixture is comfortable enough to handle, knead it gently into a soft, smooth dough. Bajra dough does not behave exactly like wheat dough and does not require extensive kneading.
3. Shape the Roti
Take a portion of dough and gently flatten it between your palms. Using a little dry bajra flour if needed, carefully pat or roll it into a round roti.
4. Cook
Place the roti on a preheated tawa over medium-high heat. Cook until the surface begins to change colour and small spots appear.
Flip and cook the other side. You can finish the roti directly over a flame for a beautifully roasted texture and aroma.
5. Serve Hot
Serve immediately with ghee, curd, dal, sabzi, jaggery or your favourite Indian accompaniment.
